Excellent – especially when I autolyse (i.e., “rest”) and don’t use the Zoji pan for baking – Maybe the most important thing I’ve learned about this machine – and breadmaking in general (being kind of a newbie) – is what Zoji misleadingly calls the “rest” period, supposedly to bring everything to room temperature. Well, that single, simple miswording led to lousy loaf after lousy loaf, for months. Hey, everything I put in the pan was already at room temp! So I just ignored that stage and went right to kneading. Big mistake. I couldn’t figure out what was going on. I searched the web for what I could be doing wrong (and also cussed out the machine since I prefer to blame inanimate objects rather than myself), but it never occured to me that not “resting” was the problem.

– I ordered this bread maker after carefully doing my research on different brands, this particular brand kept coming up as #1 so I decided to try it out. Unfortunately both of the paddles don’t collapse once the machine is finished mixing and kneading, so your left with big holes in the bread. I thought for the price (which is quite expensive) that it would drop! Also, it seems to be very loud as well. My daughter in law has a different brand (and about half the cost) and hers works soooo much quieter & better. I’m seriously thinking I should of went with a cheaper brand! Very disappointing!!!
