Temp of stone and timing of over flame most important! – Slight learning curve on temp of stone and timing of over flame, but once you get it, it’s awesome! I like to get the stone to about 680-700F. Once stone is at that and loaded coals are good, I put one piece of dried kiln oak 6″ piece about for a minute until I put dough in. Slide it in and leave door open to watch as it will cook quick and you don’t want to burn the back side. You need to turn pizza as you watch if it’s getting to hot…do 1/4 turn and watch then do again and again till all sides look good. If thicker pizza leave near the front and close door for a bit, but need to be attentive as it will burn fast if you start texting or talking on phone. Still need to turn as cooks since back is much much hotter than front of the oven. Lastly, I have to say ingredients is the most important part of making good pizza…poor ingredients even in the best oven will be mediocre. (Dry your cheese, veggies and don’t use watery sauce for best result).

Amazing Pizza Oven! – I am a hobby chef and I make excellent pizza. I have been waiting for a pizza oven that was affordable and versatile and my friend bought the smaller Ooni and I was impressed. I chose the Kari because I wanted a larger oven. I am blown away. The best pizza in Arkansas is now at my house!! I like to cook with wood and coal together because it reminds me of Patsy’s old place in New York. I also ordered the cover and it fits perfect. I am thrilled with my Ooni Faru!
